Everything You Need to Know About Lactose Free Cheese and Dairy

What is Lactose, and What Causes a Lactose Intolerance?

Lactose is the name of a sugar found in most dairy  such as milk, cream, yogurt, cheese, cottage cheese, and others. Normally, our stomachs release a digestive enzyme called lactase, which is responsible for breaking down lactose and making it ready to be absorbed. However, lactose intolerance occurs when the stomach doesn’t produce enough of this enzyme. It is a rather common condition: approximately 18% of Canadians suffer from lactose intolerance.

Luckily, there exists a simple solution. Lactose can be broken down by adding an enzyme called lactase to dairy products, making it  easier to digest and absorb by people with lactose intolerance. That’s how lactose free products are typically produced . Yes, it’s that easy!
