Broccoli Soup with Medium Light Cheddar Cheese

Soup… the perfect comfort food. And this recipe for broccoli cheese soup with Medium Light Cheddar Cheese is no exception. It’s super easy to prepare and the velvety flavour of the broccoli marries wonderfully well with the personality of our Medium Cheddar Cheese. Top with croutons, a dollop of cream, herbs, and Cheddar Cheese for a dish that’s as good to look at as it is to eat.


  • 30 mL (2 tbsp) butter
  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 60 mL (1/4 cup) flour
  • 1 L (4 cups) poultry (or vegetable) broth
  • 1 head of broccoli, cut into florets
  • 400 g (4 cups) Armstrong Medium Light Cheddar Cheese, grated

To serve

  • Croutons
  • 15% cream
  • Herbs (parsley, dill, basil, etc.), chopped


  1. In a stock pot over medium heat, brown the onion and garlic in butter, stirring occasionally, for 3 minutes.
  2. Add the flour and stir while cooking for 2 minutes. 
  3. Add the broth and broccoli. Continue stirring while cooking for 10 minutes.
  4. Using a hand blender, blend the soup to a smooth consistency.
  5. Add half of the Armstrong Medium Light Cheddar Cheese and stir until the cheese has melted.
  6. Serve, topped with croutons, cream, herbs, and the remaining cheddar.
