Breakfast Sandwich with Pizza Mozzarella Cheese

  • 12 strips of bacon
  • 6 eggs, beaten
  • 80 mL (1/3 cup) of 3.25% milk
  • 15 mL (1 tbsp) of basil pesto
  • Salt and pepper, to taste
  • Butter, to taste
  • 4 slices of Armstrong Mozzarella Cheese Slices
  • 4 English muffins
  • 60 mL (1/4 cup) of mayonnaise
  • 8 slices of tomato
  • 2 cups of arugula shoots


  1. Preheat the oven to 200° C (400° F).
  2. In a pan over medium heat, cook the bacon about 2 minutes per side. Set aside.
  3. In a bowl, beat the eggs, milk, and pesto. Season with salt and pepper.
  4. Melt a knob of butter in an ovenproof pan. Add the egg preparation and cook over medium heat for 3 minutes. Top with Armstrong Mozzarella cheese slices and cook for 5 to 6 minutes in the centre of the oven.
  5. Toast the English muffins and spread them with mayonnaise. Top each with slices of tomato, arugula, omelet portions, and 3 strips of bacon. Serve.
