Chicken, Mushroom, and Medium Cheddar Cheese Casserole

You’ll go wild for this chicken casserole recipe, enhanced with the rich, woodsy flavour of mushrooms. Add some shallots, thyme, potatoes, and our unmistakable Medium Cheddar Cheese, and you’ve got a creamy meal that will have everyone calling out for seconds!


  • 30 mL (2 tbsp) butter
  • 4 French shallots, peeled and cut in half
  • 227 g (½ lb) cremini (or white) mushrooms, sliced
  • 2 sprigs fresh thyme
  • 500 mL (2 cups) 15% cream
  • 1 store-bought rotisserie chicken, deboned and separated into pieces
  • 16 cooked baby potatoes, cut in half
  • 200 g (2 cups) Armstrong Medium Cheddar Cheese, grated


  1. Preheat the oven to 200º C (400º F).
  2. In a large ovenproof pan, heat the butter over medium-high heat. Sauté the shallots, mushrooms, and thyme, stirring the ingredients.
  3. Add the cream, chicken, and potatoes, and bring to a boil. Remove from heat.
  4. Top with Armstrong Medium Cheddar Cheese. Cook on the middle oven rack for 15 minutes.
