Gourmet Grilled Cheese

Ready in just 15 minutes, this gourmet grilled cheese recipe will tempt your taste buds with its combination of black olives, parsley, tomatoes, and garlic. Great for lunch or as a snack.


  • 8 slices Multigrain bread
  • 260 g (9,2 oz) Armstrong Cheddar Cheese, freshly grated


Olive Tomato Spread

  • 100 g (3,5 oz) black olives (pitted)
  • ½ roasted garlic clove
  • 6 medium semi dry tomatoes
  • 5 tsp (25 mL) olive oil
  • 10 leaves fresh flat leaf parsley
  • ¼ zest of lemon


Olive Tomato Spread

  1. Combine all ingredients in a food processor until a light, chunky texture is achieved.


Assembly and Finishing

  1. Lightly spread butter on both sides of the multigrain bread. On the inside of one slice, evenly spread a small amount of the olive tomato mixture.
  2. Grate Armstrong Cheddar Cheese (65 g) on the same half, close the sandwich and place the buttered sides down in a frying pan at low heat until both sides are crisp and golden brown.
  3. Cut in half and serve.
