Mild cheddar cheese block

Ingredients
- 8 slices Multigrain bread
- 260 g (9,2 oz) Armstrong Cheddar Cheese, freshly grated
Olive Tomato Spread
- 100 g (3,5 oz) black olives (pitted)
- ½ roasted garlic clove
- 6 medium semi dry tomatoes
- 5 tsp (25 mL) olive oil
- 10 leaves fresh flat leaf parsley
- ¼ zest of lemon
Directions
Olive Tomato Spread
- Combine all ingredients in a food processor until a light, chunky texture is achieved.
Assembly and Finishing
- Lightly spread butter on both sides of the multigrain bread. On the inside of one slice, evenly spread a small amount of the olive tomato mixture.
- Grate Armstrong Cheddar Cheese (65 g) on the same half, close the sandwich and place the buttered sides down in a frying pan at low heat until both sides are crisp and golden brown.
- Cut in half and serve.
