Mini Quiches with Ham, Peppers, Spinach, and Old Light Cheddar Cheese

What could be better than a tasty quiche? How about several mini-quiches! In less than 15 minutes, using a basic muffin pan, you can prepare this delicious ham and cheese quiche recipe with peppers, spinach, and Old Light Cheddar Cheese. The individual portions are practical and look great on a plate, while our popular Old Light Cheddar Cheese means you can indulge without feeling guilty.

Ingredients

  • 1 store-bought ball of pie dough, about 250 g (1/2 lb)
  • 250 mL (1 cup) cooked ham, cubed
  • 125 mL (½ cup) roasted peppers, cubed
  • 60 mL (1/4 cup) fresh spinach, coarsely chopped
  • 100 g (1 cup) Armstrong Old Light Cheddar Cheese, cubed
  • 6 eggs, beaten
  • 125 mL (½ cup) milk
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 180º C (375º F).
  2. Divide the ball of dough into 6 pieces. On a floured work surface, roll out the dough to make 6 small quiche shells.
  3. Place the dough into greased muffin cups.
  4. Equally divide the ham, peppers, spinach, and Armstrong Old Light Cheddar Cheese among the 6 quiche shells.
  5. In a bowl, beat the eggs and milk. Season with salt and pepper.
  6. Pour the egg preparation into the quiche shells and cook on the middle oven rack for 15 minutes or until the cheddar is golden.
