Olé! Who can resist nachos and melted cheese? Here’s a recipe for nachos topped with Italian sausage and Tex Mex Shredded Cheese that’s both delicious and easy to prepare. Its extra appeal? The topping - combining sausage meat with the exotic flavours of melted Tex Mex Shredded Cheese. In other words, a one-dish recipe that’s sure to tempt your taste buds while kicking off the fiesta time and time again.

Ingredients

15 mL (1 tbsp) olive oil
350 g (1 cup) Italian sausage meat
15 mL (1 tbsp) ground cumin
15 mL (1 tbsp) smoked paprika
125 mL (½ cup) Mexican salsa, store bought
150 g (6 cups) corn tortilla chips
200 g (2 cups) Armstrong Tex Mex Shredded Cheese

To serve

¼ cup frozen corn kernels
½ cup cherry tomatoes, halved
1 avocado, cubed
Fresh cilantro leaves, chopped

Directions

Preheat the oven to 200° C (400° F).
In a non-stick frying pan, heat the olive oil and brown the sausage meat for 4 to 5 minutes. As it cooks, break up the sausage meat into small pieces using a wooden spoon. Add the cumin, smoked paprika, and salsa. Continue cooking until the liquid has almost completely evaporated. Set aside.
In a large ovenproof dish, spread out the corn chips and generously sprinkle with Armstrong Tex Mex Shredded Cheese. Top with the sausage meat and cook in the oven for about 20 minutes or until the cheese has melted and browned.
Add garnish and serve hot.
