Tostadas with Pulled Pork, Pineapple-Jalapeño Salsa, and Tex Mex Shredded Cheese

Looking for a little something exotic? Try this recipe for tostadas with pulled pork, pineapple-jalapeño salsa, and Armstrong Tex Mex shredded cheese. The unique blend of pineapple and jalapeño is absolutely mouth-watering, especially when it’s enhanced with the flavour of cheese. Try it now and bring some sunshine to your plate!

Ingredients

  • 454 g (1 lb) of pulled pork (homemade or store-bought)
  • 1 cup of pineapple, diced
  • 2 tbsp of red onion, chopped
  • Half a jalapeño, in very thin rounds
  • Half a tomato, diced (optional)
  • 2 tbsp of fresh coriander, chopped
  • Zest and juice of half a lime
  • 8 tostadas
  • 125 mL (1/2 cup) of Armstrong Tex Mex Shredded Cheese

Directions

  1. In a saucepan, heat the pulled pork over low heat for 10 minutes, stirring occasionally.
  2. In the meantime, in a bowl, combine the pineapple, onion, jalapeño, tomato, coriander, and lime zest and juice. Set the salsa aside.
  3. Top the tostadas with pulled pork, salsa, and cheese. Serve.
