Vegetarian wrap with Havarti Cheese

This colourful vegetarian wrap recipe is sure to be the star of your next picnic in the park! Roll up carrots, avocados, peppers, and tomatoes in a leaf of cabbage... add some hummus and Armstrong Havarti Cheese for a delicious lunch idea. Who knew eating your vegetables could be so much fun?

Ingredients

  • 1 large collard green leaf
  • 2 Armstrong Havarti Cheese slices
  • 1 tomato, sliced
  • ¼ yellow bell pepper, julienned
  • 1 carrot, julienned
  • 1 red cabbage leaf, julienned
  • ½ avocado, sliced
  • 2 tbsp (30 mL) hummus

Directions

  1. Blanch collard leaf one to two minutes in boiling water.
  2. Spread hummus on the collard leaf.
  3. Place Havarti Cheese slices on top and garnish with remaining ingredients.
  4. Roll and slice.
