Cook the chicken according to the package instructions.
Spread half of the waffles on the platter and add half the cheese on top. Cut the fried chicken into bite size pieces and place them on top. Add the hot sauce and honey, to taste. Add the remaining cheese and finish by placing the other waffle on top.
In a cast-iron pan, add a knob of butter and let melt until the butter begins bubbling.
Add the sandwiches and cook for a few minutes until the waffles are crunchy and golden, then flip them. Cook for a few minutes on the other side, until all the cheese is melted, and the outside of the sandwiches is crunchy. Remove from the heat and let them rest for a minute. While the sandwiches rest, mix equal portions of hot sauce and honey and serve with the sandwiches.
