Grilled Cheese with Flank Steak, Mushrooms, Onions, and Marble Cheddar Cheese

Here’s a deluxe grilled cheese sandwich, ready in no time at all, that tastes absolutely heavenly. Tell us what you think of this beef grilled cheese recipe, in which flank steak, mushrooms, onions, and red wine pair perfectly with our meltingly soft Marble Cheddar Cheese. Indulge and enjoy!


  • 5 mL (1 tsp) “Montreal” style steak spice
  • 75 mL (5 tbsp) butter
  • ½ onion, cut into half-rings
  • 8 cremini mushrooms, sliced 
  • 60 mL (1/4 cup) red wine 
  • 8 slices white bread 
  • Butter for spreading, to taste
  • 8 slices Armstrong Marble Cheddar Cheese


  1. On a work surface, sprinkle the flank steak with steak spice.
  2. In a skillet over medium-high heat, melt 15 mL (1 tbsp) of butter, cooking the flank steak for 3 to 4 minutes per side (to desired doneness). Take out the meat and set aside. 
  3. In the same skillet, cook the onion and the mushrooms, stirring for about 2 minutes. Add the wine and continue stirring, cooking until the wine has evaporated.
  4. On a cutting board, slice the flank steak into 1 cm (¼-inch) slices.
  5. On a work surface, butter the slices of bread.
  6. Top 4 slices of bread with a slice of Armstrong Marble Cheddar Cheese, onion, mushrooms, and slices of flank steak. Cover each with a slice of cheddar and another slice of bread.
  7.  In a large skillet over medium-low heat, cook each grilled cheese on a knob of butter, 4 minutes per side.
