Ingredients
- 1 cup Armstrong High in Protein Marble Cheddar Shredded Cheese
- 2 large sweet potatoes, washed
- Olive oil, for cooking
- Salt and pepper
- A pinch of paprika
- 1 cup cooked ground beef
- 1 tomato, diced
- ½ cup guacamole, homemade or store-bought
- A few slices of fresh jalapeño
- A few flat-leaf parsley leaves
- Lime wedges, for serving
Directions
- Preheat the oven to 400°F.
- Slice the sweet potatoes into thin rounds and place them on a parchment-lined baking sheet. Drizzle with olive oil, then season with salt, pepper, and paprika.
- Bake for about 20 minutes, flipping the rounds halfway through, until golden and crisp.
- Remove from the oven and cover the sweet potatoes with a generous handful of shredded cheese. Add the ground beef, then another layer of cheese. Return to the oven for about 10 minutes, or until the cheese is fully melted.
- Top with diced tomatoes, guacamole, jalapeño slices, and parsley. Sprinkle with a bit more cheese if desired, add lime wedges, and serve while everything is still warm and melty.
