Make the patties: Divide the ground beef into 12 equal portions (about 110 g each). Shape into thin, even patties slightly wider than the buns. Season both sides with salt and pepper.
Grill or pan-fry the patties: Heat a grill or skillet over medium-high heat with olive oil. Cook patties in batches, about 3–4 minutes per side. In the last 30 seconds, top each with a slice of Armstrong Medium Cheddar and cover to melt.
Toast the buns: Toast the buns on the grill or in a pan until lightly golden.
Assemble: Spread BBQ sauce on the bottom bun. Layer cheesy patties, tomato, red onion, lettuce, and top with the bun lid.
Serve: Serve hot. Use a skewer or knife to hold the tower together if needed.
