Smashburger Tacos
Ingredients
Sauce
- 3 tbsp mayonnaise
- 3 tbsp ketchup
- 3 tbsp sweet relish
- 1 tsp yellow mustard
Garnish
- 2 to 3 finely chopped iceberg lettuce leaves
- 4 tbsp finely chopped dill pickles
- Sprinkle of Armstrong Tex Mex Shredded Cheese
- 1 lb ground beef
- Salt and pepper
- 8 small corn flour tortillas
- Vegetable oil for cooking
- 16 Slices Armstrong Medium Cheddar Cheese (2 per serving)
Directions
- For the sauce:
- Mix all the ingredients in a bowl using a small whisk. Set aside.
- For the garnish:
- Prepare the lettuce and pickles before you start making the tacos. The tacos are very quick to make and cool down quickly, so prepare everything in advance.
- For the Smash Burger tacos:
- Mix the ground beef with salt and pepper. Spread a thin layer of beef on the tortillas. Prepare all of them before you start cooking.
- Preheat a skillet or griddle over high heat. It should be very hot and smoking.
- Brush a little oil in the skillet and place a tortilla in it, beef side down. Press down lightly with a flat surface (use the bottom of a saucepan) and cook for 1 to 2 minutes.
- Flip it over, place two slices of cheese on the beef, and cover for 30 seconds to melt the cheese.
- Remove the tortilla from the pan and repeat for all the tacos. To keep them warm, you can place them in the oven at 300°F (on a rack so they don't get soggy).
- Top them off with lettuce, sauce, and pickles.
