  1. Heat a large nonstick skillet over high heat. Add the diced turkey bacon, bell peppers and olive oil. Cook over high heat for 3 to 4 minutes, or until the bacon is crispy. Transfer to a bowl, wipe the skillet clean, and return it to the heat to cook the egg whites.
  2. In a large bowl, whisk together the egg whites and salt. Pour 1 tablespoon of olive oil into the skillet and heat for 1 minute. Add the egg white mixture, spinach, and 1/2 cup of Armstrong shredded cheese. Cook over medium heat, stirring frequently, for 2 minutes or until they begin to set. Transfer to another bowl and wipe the skillet again.
  3. Place each tortilla on a flat, clean surface, top with scrambled eggs, the veggies, sliced avocado, and cheese. Fold them into tight burritos. Brown them for 1 to 2 minutes on each side in a skillet, until crispy and golden brown. Serve hot with your favorite salsa.
